I am certain I have read some scrummy recipes on here but cant find em anywhere! Please can someone give me a good authentic (tried and tested!) recipe for my favourite dish. Thanks x

I used that recipe but found that it does not need the vinegar and works far better with red wine. The simpler the better in my book :)

That doesn't surprise me Erja....I think I'd choose red wine over vinegar any day!

Yummy i could just eat a steaming hot Stifado right now to keep the cold out but looks like i will have to do with a chicken tikka madrass tonight :-)

Stifado is my # 1 favourite dish of them all !!
But like others I don't use vinegar either, only red wine.
And instead of nutmeg and rosemary I add 5-7 dried juniper grains.

Will try out your reciepe though, Phil. We learn as long as we live,
and maybe your recipe is better than mine.

I don't use a set recipe so mine differ slightly everytime.
As long as you have the right ingredients it doesn't matter about measurements. It also depends how I feel cos sometimes I will add a bit of carrot or even a dash of Worcester Sauce.
Agree no vinegar but red wine yes. Tend to use Pasatta and beef stock along with the cinammon stick, bay leaf, ground cloves (pinch) fresh garlic etc etc.
Chuck it all in and taste the sauce after about an hour or two. You can then add to it to enhance the flavours.
Might make one this weekend now.

Looks as If we are having a Greek inspired eating weekend.

Tonight Jan is doing Dakos (from Crete) as a starter and Lamb tray bake for mains. Keftedes, veg, tomatoes and feta on a tray in the oven.
Tomorrow I'm going to do the stifado with lemon oven potatoes and roasted carrots.

Both meals washed down with plenty of red stuff.
