Hi Eggy.Just for you

Parma Ham & Melon Salad

Ingredients
1 canteloupe or galia melon
8 Parma ham slices
Freshly ground pepper
Olive oil, for drizzling
Parsley, for garnishing
Instructions
Peel the melon, remove the seeds and cut into 8 slices.
Wrap each melon wedge with a slice of Parma ham.
Drizzle the dish with olive oil and sprinkle with parsley and pepper. Serve immediately.

OR TRY

Minted melon, feta & ham salad

Serves: 4

Ingredients
1 Melon

90g pack  Wild Rocket

7 slices Serrano or Parma ham

100g feta cheese, roughly crumbled

2 tbsp fresh mint, finely chopped

Juice 1 small lemon

2 tbsp extra virgin olive oil

Method
1. Halve the melon, scoop out the seeds with a spoon and discard. Slice each half of the melon into 8 wedges. Cut away the melon flesh from the rind, keeping the melon in large pieces.

2. Scatter three-quarters of the rocket leaves over a large bowl or serving platter. Top with the melon wedges.

3. Tear each slice of ham in half then arrange over the melon along with the feta cheese and remaining rocket leaves. Sprinkle over the mint and some freshly ground black pepper.

4. Whisk together the lemon juice and olive oil then drizzle over the top of the salad. Serve immediately.

Lovely melon Neil.
I’m getting a lot of bra adverts on this page. Thought maybe it was cos of the melons? Somewhere to store them?
So gutted we had to cancel this year but we’ve rebooked for 2021. Fingers crossed.
Take care. Miss you all. Mo and Dave X
