Greek cooking Help needed

During this year's holiday In Arillas, Mick almost looked like a cheese pie, he devoured that many. Thought I would suprise him tonight with this as a starter!

So:-

I have some fresh filo pastry
greek Feta

Please advise!! The triangle shape is even panicking me!

DONT PANIC - JO!

You could google the recipe... there are loads of Greek cookery websites.

Or... you could make just one big one.. layer up the filo pastry, add the cheese/spinach or even courgettes and top it with the rest of the pastry and then cut across the top diagonally into diamonds.

Or.... cut into wide strips/squares add your filling and fold over, diagonally - I have done this with puff pastry and made Greek cheesey rolls and they taste gorgeous.

Let us know how you get on.. you might find an easy recipe on the "tinternet".  If I find one I will post it on here for you.

I googled it Jo and there are loads of recipes of all sorts for cheese pies, too many for me to list.    You just need to pick one out that you can follow.  Have fun!

I cannot believe how stupid I am, was thinking of all these complicated ways of folding, never thought of cutting shape out!! I will have a look now

Ok, so the folding took a few goes but here is the result!!



Tasted very good they did too! Not the same as eating them in Arillas but still quite nice!

If it's Cheese pies you like pop into the Tria Adelphia when your next in Arillas and try one of Helens, they are a meal in themselves the best In Arillas

Ah well done Jo. Even the courage to put a pic on here! They looked lovely.

I adore the cheese or the spinach pies. Have my own version of the spinach one (lol - no they don't have Mythos in them!) but I just make a large one in a huge baking tray. Yum!

And John is right - at Tria they really do make a meal in themselves. One of those and a carafe of red wine for lunch sounds like heaven to me.

They turned out really well Jo and look deliciious!  Well done!!

You could try the way the do in the bakery.... cut a fairly long strip, put your filling in and roll up then twist it into a spiral..  you get a good sized portion then.  My favourite have the spinach in them.

Well done you Jo for giving it a go - they looked really scrummy!
I'm not a massive fan of Filo & tend to steer clear of it - despite my ever-growing library of greek & meze cookbooks, but I was impressed by your 'have a go attitude' & think I'll try something similar over the bank holiday break!
Looking at the finished product again is starting to make my tummy rumble :-)
